Curried Chickpea Salad

Mashed Chickpea Ingredients:

Chickpea Salad Ingredients:

  • 1/4 cup Green Onions, chopped
  • 1/4 cup Grapes, chopped (can substitute for dried cranberries or raisins)
  • 1/4 cup Celery, finely chopped
  • 1/4 cup Broccoli, finely chopped
  • 1/4 cup Carrots, grated

Pita Ingredients:

  • Pita pockets
  • Optional: Spinach or Lettuce


  • Combine all mashed chickpea ingredients and mash chickpeas to your liking using a fork or a pestle.
  • Add remaining chickpea salad ingredients and toss until well combined.
  • Cut an opening in a pita pocket and add fresh spinach or lettuce. 
  • Top with chickpea salad filling. Enjoy!
