 
            Watermelon Raspberry Salad

INGREDIENTS
- 
2 cups Watermelon, cubed (1” pieces) 
- 
2 cups Spinach, chopped 
- 
3 cups Arugula 
- 
1/2 cup Red onion, sliced 
- 
3 Raspberries, halved 
- 
3 cups Cucumber, thinly sliced lengthwise 
- 
1/3 cup Feta, crumbled 
- 
1/8 cup Walnuts 
DIRECTIONS
- 
In a bowl add chopped spinach and arugula, toss and set aside. 
- 
Prepare watermelon, raspberries and red onion. Use a mandolin to thinly slice the cucumber lengthwise and set aside. 
- 
Now build your salad on your plate. Add the mixed greens, watermelon, raspberries & red onion. Curl the cucumber slices into a twist and set on top. Crumble feta & walnuts over top. 
- 
Season to your liking with salt and pepper. Finish it off with a drizzle of OLiV Basil EVOO, and Pomegranate Balsamic. Enjoy!
